Pasta with Ventricina del Vastese sauce. Here is the recipe to make it at home in 5 simple steps

Pasta with Ventricina del Vastese sauce is a tasty recipe that can be made at any time during the year. It is a very simple recipe to make and can be made by anyone. The important thing is to have top quality products and not a lot of thoughts for the line 🙂

Below is the recipe for a single portion. For the quantities for more people just multiply these quantities you see in the picture by the number of diners.

What are the ingredients for pasta with Ventricina del Vastese sauce?

  • Fresh “Sagnette” pasta
  • Ventricina del Vastese
  • Onion, celery and basil
  • Tomato puree
  • Cheese (for flakes for final decoration)
  • Extra virgin olive oil

What is the procedure we recommend you follow?

Step 1. Start by preparing chopped onion, celery and basil. Heat the extra virgin olive oil in a large pan.

Step 2. Pour the mince into the pot and cook for 2-3 minutes over low heat, avoid burning the onion

Step 3. Cut the ventricina into 1 cm cubes and add it to the pan.

Step 4. Add the tomato puree, add a little salt (remember that most of the flavor will be given by the ventricina, so stick with it! :)) and let it cook for a few minutes.

Step 5. Cook the sagnette in boiling water. After having drained them, pour them directly into the pan with the Ventricina sauce and mix so that the sauce reaches and evenly wraps the pasta. Put on a plate, add some cheese flakes, a leaf of fresh basil and serve.
